The learning curve
We burned the first three batches.
The drum was too hot, the timing was a guess, and the smoke alarm cleared the room. That was five years ago in a draughty garage off West Street. We learned the hard way that specialty coffee does not forgive shortcuts.
Today, we roast on a restored 1960s Probat that responds to a single degree of change, cupping every batch before it makes the shelf. We never rush the cooling cycle, and we refuse to blend away the quirks of a spectacular single-origin bean. The craft is in the patience, and the patience is what ends up in your cup.

Every detail matters when you are chasing the perfect extraction. Here is how we ensure consistency on the shelf and in the cup.
Direct from the producers
We buy our green beans straight from family-run estates in Yirgacheffe and Huila, paying above fair-trade minimums to guarantee next year's harvest.
Precision small-batch roasting
Every profile is logged, tasted, and tweaked. We roast in 5kg batches to maintain total control over the development of those delicate fruit notes.
Obsessive extraction
Our baristas weigh every dose and time every shot. We dial in the grinders three times a day to account for shifts in humidity and temperature.

Anaerobic Gesha pour over
Finca El Paraiso, Colombia. A wildly floral cup with distinct notes of peach, jasmine, and a lingering honey sweetness. Brewed fresh on the V60.

What brewing methods do you use in-store?
We dial in our single-origins primarily through V60 pour-overs and AeroPress for maximum clarity. For our house blend, we run a traditional 9-bar espresso extraction on our custom multi-boiler setup.
Where do you source your coffee beans?
We work directly with small-lot producers in Yirgacheffe, Huila, and Antigua. By bypassing the commodity market, we ensure fair compensation and complete traceability back to the exact washing station.
Are your coffee beans certified organic?
Yes, our entire seasonal rotation is certified organic. We prioritize estates that use shade-grown methods and avoid synthetic pesticides, maintaining the complex soil profiles that give our roasts their distinct terroir.
Do you offer dairy-free milk alternatives?
We stock a rotating selection of plant-based milks specifically formulated for steaming. Our standard alternatives are oat and macadamia, chosen for their neutral flavor profiles and stable microfoam.
Do you have vegan or gluten-free options?
Absolutely. We bring in a daily, limited run of pastries from local independent bakers. You will always find at least two vegan and gluten-free choices on the counter before 11 AM.
